New Meatloaf Recipe

- ¼ C butter2 lg yellow onion, finely chopped2 english muffins¾ C cold water3 lg eggs2 T ketchup1 T kosher salt1 tsp black pepper2 lbs hamburgerCook the onions in ¼ cup of butter over medium heat until lightly golden.Tear each English muffin into chunks, then add those to a food processor. Pulse until very fine.Add ¾ cup of water to the onions, remove from heat and let cool slightly.Heat the oven to 350°F. Line a rimmed sheet pan with foil.Mix the bread crumbs in a large bowl with the 3 eggs, 2 tablespoons ketchup, 1 tablespoon salt, and 1 teaspoon of black pepper. Add the hamburger and stir until mostly combined. Add the onion-water mixture (it’s okay if it’s slightly warm still—you just don’t want it hot). Don’t overmix, which can make the meatloaf tough.Dump the meatloaf mixture onto the lined sheet pan. Form into a loaf shape, roughly 9x5-inches. Add ketchup for the glaze.Bake for 50 minutes to 1 hour, rotating halfway through, until the center is firm to the touch and reads 150° to 155°F on a thermometer. Let rest for about 15 minutes before slicing.
