- Monday, November 19, 2018Chili-cheese steaks1½ T flour1 tsp salt1 tsp chili powderâ…› tsp pepper1 lb. round steakâ…› C shortening1 C chopped onions8 oz. tomatoes½ C shredded cheese Combine flour, salt, chili powder & pepper. Trim fat from meat & cut into serving pieces. Sprinkle with some of the flour mixture and pound; turn and repeat. Brown well in shortening. Remove meat. Brown onions and stir in remaining flour mixture. In casserole dish, spoon onion mixture. Arrange steaks on top. Add tomatoes. Cover and bake at 350° for 1 hour. Sprinkle with cheese and heat 5 minutes or until melted.
- Tuesday, May 20, 2025Taco Bell PeppersIngredients ¼ C Sour Cream (optional) ½ C Water 1 ½ C Grated Cheddar Cheese 1 lb Ground Beef 3 Green Peppers, halved Seasoning ¼ tsp Black Pepper ¼ tsp Cayenne Pepper 1 tsp Garlic Powder 1 tsp Paprika 1 tsp Cumin 2 tsp Onion Powder 1 T Oregano 1 T Chili Powder Instructions Preheat oven to 350°. Place peppers on a cookie sheet, open side down. Rub with olive oil and season with salt and pepper. Place in oven until meat is done. Brown the ground beef until cooked through. Add the seasonings and ½ C of water. Cook until water is boiled out. Remove from heat. Add 1 C shredded cheese and ¼ C sour cream, mix thoroughly. Remove peppers from oven and flip over. Fill the peppers with the ground beef and cheese. Bake 20-30 minutes until peppers are heated through and cheese is melted. Bonus add-on: sprinkle peppers with crush tortilla chips and diced tomatoes before serving.

½ C lime juice
½ C chopped cilantro
¼ C Dijon mustard
2 T minced canned Chipotle peppers in adobo sauce
2 T sauce from peppers
6 cloves garlic, minced
1 tsp ground cumin
1 tsp salt
½ tsp ground allspice
½ tsp black pepper
Combine all ingredients in a small bowl. Mix to combine. Pour over steaks, cover and refrigerate at least two hours, or overnight if possible.
At cooking time, remove steaks to a platter, pour marinade into a small saucepan. Bring to a boil over low heat and simmer 5 minutes. Reserve half the sauce on the side. Using remaining half, baste steaks while cooking.
When steaks are done, pour reserved marinade over steaks before serving.
- Tuesday, November 20, 2018Meatloaf2 ½ lbs ground beef 1 lg egg 3 T half and half 2 tsp horseradish 1 C ketchup 1 T mustard 1 tsp black pepper 1 T minced fresh garlic ½ C finely diced celery (one stalk)½ C finely diced onion (¼ onion)½ C finely diced green pepper 1 ½ C plain bread crumbs (or one sleeve of crackers, crushed) Preheat your oven to 375°F. In a large bowl, mix together the ground beef, half and half, an egg, and the seasonings. Spray your hands with vegetable cooking spray and get right in there, mixing your meatloaf up well. Now add in the rest of your ingredients and mix them up very well. Shape your meat mixture into a loaf and place it onto a baking pan that you have sprayed with vegetable cooking spray. Be sure to smooth out the top part of the loaf with your hands. You can choose either to dome the top part or make it flat, whatever your preference is. After it's smoothed or domed, spread the ketchup over the outside. Bake for about 45 minutes or until your meatloaf reaches an internal temperature of 160°F in its center at the thickest part. Allow it to cool slightly before you slice and serve.
- Tuesday, March 19, 2019New Meatloaf Recipe¼ C butter2 lg yellow onion, finely chopped2 english muffins¾ C cold water3 lg eggs2 T ketchup1 T kosher salt1 tsp black pepper2 lbs hamburgerCook the onions in ¼ cup of butter over medium heat until lightly golden.Tear each English muffin into chunks, then add those to a food processor. Pulse until very fine.Add ¾ cup of water to the onions, remove from heat and let cool slightly.Heat the oven to 350°F. Line a rimmed sheet pan with foil.Mix the bread crumbs in a large bowl with the 3 eggs, 2 tablespoons ketchup, 1 tablespoon salt, and 1 teaspoon of black pepper. Add the hamburger and stir until mostly combined. Add the onion-water mixture (it’s okay if it’s slightly warm still—you just don’t want it hot). Don’t overmix, which can make the meatloaf tough.Dump the meatloaf mixture onto the lined sheet pan. Form into a loaf shape, roughly 9x5-inches. Add ketchup for the glaze.Bake for 50 minutes to 1 hour, rotating halfway through, until the center is firm to the touch and reads 150° to 155°F on a thermometer. Let rest for about 15 minutes before slicing.
- Monday, June 22, 2020Mongolian Beef1 T vegetable oil 1 T plus 1 ½ teaspoons finely chopped garlic¾ tsp grated fresh ginger root¾ C soy sauce ¾ C water1 C dark brown sugar1 ½ lbs beef flank steak, sliced ¼ inch thick on the diagonal¼ C plus 2 tablespoons cornstarch1 ½ C vegetable oil for frying3 bunches green onions, cut in 2-inch lengthsHeat 2 teaspoons of vegetable oil in a saucepan over medium heat, and cook and stir the garlic and ginger until they release their fragrance, about 30 seconds. Pour in the soy sauce, water, and brown sugar. Raise the heat to medium-high, and stir 4 minutes, until the sugar has dissolved and the sauce boils and slightly thickens. Remove sauce from the heat, and set aside.Place the sliced beef into a bowl, and stir the cornstarch into the beef, coating it thoroughly. Allow the beef and cornstarch to sit until most of the juices from the meat have been absorbed by the cornstarch, about 10 minutes.Heat the vegetable oil in a deep-sided skillet or wok to 375 degrees F (190 degrees C).Shake excess cornstarch from the beef slices, and drop them into the hot oil, a few at a time. Stir briefly, and fry until the edges become crisp and start to brown, about 2 minutes. Remove the beef from the oil with a large slotted spoon, and allow to drain on paper towels to remove excess oil.Pour the oil out of the skillet or wok, and return the pan to medium heat. Return the beef slices to the pan, stir briefly, and pour in the reserved sauce. Stir once or twice to combine, and add the green onions. Bring the mixture to a boil, and cook until the onions have softened and turned bright green, about 2 minutes.

Spread over roast.Cook for 15 minutes at 450°. Reduce temp to 325° and cook until meat is 120°. Cover and let stand for 15 minutes.

Stir in soups and water. Heat to boiling, then turn down heat. Combine bread, milk, egg, salt & beef. Shape into balls the size of ping-pong balls. Drop into sauce and simmer about 1 hour.
- Monday, November 19, 2018Swiss Steak with Carrot-onion gravy1 ¼ lb. round steak3 T flour2 T shortening½ C chopped onion½ C grated carrot1 tsp salt⅛ tsp pepper¼ tsp thyme2 bay leaves3 whole cloves Wipe steak with damp paper towels. Roll in 2 T flour, coating evenly on both sides. Brown steak in melted shortening for 15-20 minutes. Add remaining ingredients except flour along with 1 cup water and bring to a boil. Reduce heat and simmer, adding water as necessary to avoid dryness, covered for 2-2 ½ hours, until meat is fork tender. Use remaining flour to make gravy.
